Universally regarded as the finest wood for aging spirits, oak enriches the cachaça with amber color, fruity aromas, and complex flavors. It brings sensory layers of vanilla, fig, honey, dried fruit, almonds, walnuts, chocolate, tobacco, licorice, butter, brown sugar, berries, coconut, and more. VILLAGGIO DE SIMONI ages cachaça for 8 to 15 years in 200-liter barrels made of French, Scottish, Japanese, and American oak, placing it among the most select in Brazil.
BALSAM
Also known as cabriúva, balsam imparts a golden, shimmering color to the cachaça — sometimes amber-red, sometimes gold with greenish hues. Its distinctive flavor is woody yet smooth, without harshness. Aging in balsam yields vegetal and herbal notes, often floral, with hints of dried plum, spices, almond, anise, clove, fennel, chamomile, and a full bouquet of aromas.
