Cachaça is a living spirit, shaped by the origins that Mother Nature provides. At VILLAGGIO DE SIMONI, in Capivari-SP, it finds a unique microclimate perfect for growing organic sugarcane. From a small artisanal still, this boutique cachaça is crafted for gourmets and discerning connoisseurs.
The Sun, Mother Earth, and their extraordinary terroir make VILLAGGIO a true sanctuary. No pesticides or chemicals are used—only care and respect for nature. Here, the essence of true artisanal cachaça is cultivated, captured, and bottled in one place, then left to rest, age, and mature for many years in barrels and vats made from the finest woods: Scottish, French, Japanese, and American oak, balsam, cabreúva, jequitibá, peanut wood, pink jequitibá, amburana, and Brazilian cherry.
Harvesting takes place early in the morning to preserve its elegant and delicate fruity flavor. Only the middle stalks of the cane are selected—discarding the lower and upper parts to ensure the ideal sucrose content—and crushing is done immediately, followed by natural fermentation. During distillation, both the "head" and the "tail" are discarded, preserving only the "heart" of the spirit. This heart is what delivers a refined, flavorful, and sensorially rich experience. Its aroma blends with the surroundings—beside a lush orchard and forest where hundreds of native Brazilian fruits have been cultivated for over half a century.

VILLAGGIO DE SIMONI ages its cachaça in 200-liter barrels for 8 to 15 years, using French, Scottish, Japanese, and American oak.
