Renowned worldwide as the premier wood for spirit aging, oak provides rich amber color, aromatic complexity, and a broad spectrum of flavors: vanilla, fig, honey, dried fruits, almonds, walnuts, chocolate, tobacco, licorice, butter, brown sugar, berries, coconut, and more. VILLAGGIO DE SIMONI ages its cachaça in 200-liter barrels for 8 to 15 years, using French, Scottish, Japanese, and American oak.

Also known as cabriúva, balsam delivers a vivid golden hue and a complex array of aromas and flavors. Its profile includes herbal, floral, citrusy, bitter, and fruity notes, with hints of dried plum, almond, anise, clove, fennel, and chamomile — all contributing to a multi-sensory experience.
